Fabulously Phat Fast Food Fish

by Erica

fast food fishI’ve had so many people reach out to me lately saying, “I get that I need to eat healthy but it’s so complicated.”

It’s really not … you just have to use your imagination.

Yesterday I was sick of cooking chicken. So I went out and bought some fish, coriander (cilantro) and ginger and created a new recipe I’ve now called “Fabulously Phat Fast Food Fish.”

I am not a great cook, I hate recipe books, and I can’t stand anything that’s not simple. So I play with food and I play with ingredients. And let me tell you, last night’s dinner was orgasmic! I’m serious … my mouth was dancing with excitement. If you think fish is boring … you need to try “Fabulously Phat Fast Food Fish.”

Ingredients
Fleshy white fish
1/2 onion, chopped
1 tablespoon ginger, grated
Sprigs of coriander (cilantro)
Garlic salt, sprinkle
1 tablespoon olive oil

Method
Heat oven to 360F (180C), fan force
Lay fish on aluminum foil
Rub olive oil over both sides of fish
Cover with chopped onion, coriander (cilantro) and ginger
Sprinkle lightly with garlic salt
Seal fish into a pocket by rolling the foil length ways first, then roll the edges so that the fish steams within the foil
Place in roasting dish in oven on fan force for 20-25mins.

Could that be any easier? Pair it with spinach, broccoli or cauliflower and you have an incredibly economical, delicious and yet oh so simple fish dinner.

Give it a whirl and let me know how you enjoyed “Fabulously Phat Fast Food Fish.”
