Feeling full is one of the easiest ways to prevent cravings and when I’m feeling a bit naughty I always turn to a hearty bowl of Lentil Soup.
I want to share with you the yummiest way of staying full that I’ve ever come across. I’m not too sure how you feel about Lentil Soup, but lentils could become your very best friend.
Lentils are an incredible source of protein and they’re also full of fiber. It’s the fiber that should get you excited. It means they keep you full.
I think one of the hardest things to get in the habit of when we’re trying to learn new healthy eating habits, is having something healthy on hand when we need it.
So for that reason, I always try and make sure I have a pot of Lentil Soup in the wings ready for a quick re-heat.
This recipe comes to you via my BFF Lisa who put me onto this many years ago when we were sharing a flat together.

Lentil Soup For The Soul
1 cup lentils
1/2 cup pearl barley
garlic – as many cloves as you like (I put about a dozen in whole but that’s my personal preference)
2 sliced carrots
2 cups cauliflower pieces
1 cup broccoli pieces
3 sliced courgettes
6 chopped mushrooms
2 tbspns miso
tamari and rock salt to taste
Method of Preparation
Boil the barley in roughly 8 cups of water, on high for about 30 minutes and then add the lentils and boil for another 20 minutes.
Add chopped onion, garlic, carrots, cauliflower and miso and bring the heat down to a gentle boil with lid semi covering the pot for 10 minutes.
Add remaining vegetables and simmer gently for another 10 minutes.
Take off the heat and allow to cool so the flavors can settle in.
Best served next day.
And that’s it – so simple and yet so nutritious. I reach for a quick bowl of Lentil Soup at lunch time, and even dinner time if I can’t be bothered preparing a meal, and I LOVE it. It’s so good for you and really keeps you feeling satisfied.
